Trident Hyderabad with its stylish and modern design is located in the heart of the Hitec City - the Information technology hub of Hyderabad. I was planning to visit since the day I came to know they are coming up in Hyderabad. The entrance and the lobby are so gracefully and majestically done to perfection with lots of beige and cream colours combination with absolutely amazing high roof, seamless high glass panes and flawless flooring makes this place very well-designed, relaxing, pleasing to the eye and airy. I had been to their other properties and always love the experience; finally I get to visit this place on lazy Sunday for the brunch. The hotel has different dining places like Amara, Kanak, Tuscany, Ninety Six and Cigar Lounge (Purely Cigars ONLY). The Sunday brunch is at the Amara, the all day dining restaurant with an open kitchen which serves the best world cuisine, with an emphasis on Mediterranean and Asian food.
Amara, which means “Unfading” in Sanskrit, The moment I entered the Amara restaurant was greeted by a lovely lady in a Sari or Saree, which is a pleasant surprise breaking the monotony of the boring western outfits. She very gracefully guided me to the table reserved for me at the corner as per my preference adjacent to the 20 feet high glass pane giving me seamless view of the buzzing hitec city road. The moment I sat steward came and served bottled water, this is good even without asking doing the honours is nice. I looked around the whole place to have the feel of it and I have noticed all the stewards, captains, assistant managers and managers all are given one single dress code without discriminating them. This is an amazing step taken by the management to show equality and to give dignity of labour. To my surprise I came across a Lady F & B Manger Natasha Mehta, I can surely say Women are making their presence felt in the corporate sector. I am convinced this would be a trend setting in the hospitality sector soon.
Let me describe the ambiance, a copper decorated show kitchen with a rotisol oven and tandoors, colourful pots and pans, extensive buffet spreads, and bone coloured corian table tops and dark oak coloured furniture with red upholstery, the entire look and feel is very refreshing and upbeat. Then I went around having a glance at the brunch spread and believe me, I am not comparing to any other place but in general it is a fine spread with good feel and fine balance of cuisines from across the globe.
From the live station I had Omlet followed by Apam with three different gravys – Shrimp massamam Curry which was amazing, Cocunut milk curry done to perfection, very creamy and tasty and finally Pork Chilly Fry. I must say Pork chilly fry one of the best I had in a very long time very tender, succulent and aromatic. Then I had Mutton keema on Egg Dosa served with coconut chutney, ginger chutney and sambar. Dosa was good but the coconut chutney was not upto the mark, would like if they would have used a slightly tender coconut and the sambar was very yummy with perfect blend of sweetness and sourness. Then came along Green Apple Martini, I was totally spellbound with the concoction, I can still feel the flavour lingering on my taste buds. Next to come was thin crust Veggie Pizza with bell pepper toping. The pizza was good with decent amount of cheese on it. Then I tried the Tacos and nachos with different stuffing’s, they were amazing and very yummy. Then there was two different types of Hummus with pita bread, this was rightly done, I am sure Chef’s work experience from Egypt has worked magic in this dish.
I then moved to the sushi section where I have tasted Bell pepper, Avacado, mixed veggie and Salmon sushi done in Maki and Uramaki style. They did a decent job in executing the sushi but can be improved. Next on my view was Pasta with choice of Panne and Farfalle with different choice of sauce made at the live counter.
From the main course, Vegetable Biryani, Chicken Biryani and Mutton Biryani were on the spread along with raita bar, where you can make your own raita with different ingredients including few fresh cut fruits. The chicken Biryani was very flavoursome and the chicken was absolutely and flawlessly done. The mutton Biryani was not upto the expectations and did give my feed back to the chef about the shortcomings in it, he very kindly welcomed my recommendations.
Other dishes include Braised Chicken in Star anise with soya sauce, Mixed Sea food curry, Roast Tenderloin with vegetables, Meen pollichathu was bang on target with perfect amount of spices and the fish was delicious. And from the Veggie section Stir Fried Babycorn mushroon and broccoli, Okra and potato in chilly soya sauce, Paneer Khurchan, Miloni Tarkari, Dal Makhani, Bhindi Amchuri, Methi Matar Malai, Punjabi Chole, Rasam, Sambar and Curd rice. There is a decent spread of Salads, Cheese and breads. I had Dahi bhalla and Onion Pokora which are among the most sorts after snacks on the buffet. I must say chef and his team did a wonderful job by making such a massive spread.
I wonder how the time passed by, one has to experience to believe it. I had a marathon innings almost four and a half hours and finally moved to my most favourite section DESSERTS. Seviya Kheer was absolutely yummy, Shahi Tukada was too sweet to me, I guess that was the reason it is served in small portion, hahaha... Then I had what I don’t even remember I reached a state of Nirvana after having those lovely chocolate balls and Chocolate brownies. Apart from them there were 25+ different desserts from mousse, soufflĂ©, pudding, ice creams, Sorbet, pastries, jellys, baked yoguts, fresh fruits, Indian Desserts and Donuts. I did not get bored as there was so much variety in them. Finally I ended up having total 29 desserts breaking my old record of 19 desserts 9 months back. The pick of the spread was Waffles with blue berry syrup and maple syrup, undoubtedly one of the best in the city. I controlled myself, to have other desserts or else I would have ended eating just the waffles. I am sure this one reason would be enough to foodies to go to this place.
The man behind this exclusive spread, Chef Arjun, with having experience working at different properties with Oberoi in India and Egypt, aims at preparing and capturing delicious and exciting range of flavours, textures and aromas. To encapsulate this is a great brunch spread with different cuisines from different corners of the world, be it Indian, Japanese, Chinese, Vietnamese, Italian, Mediterranean and Mexican. With its multiple wine rooms, delectable restaurants and heart warming service I am sure Trident would be a place to recon in the coming future. Unswerving and not easily seen service at Amara would make this restaurant a benchmark in the industry. Kudos to Ms. Rajveer and Ms. Natasha Mehta, for organising such an exhaustive brunch faultless. I am sure already they have made enough noise to give shivers to other hotels in the city. Watch out!
